Garlic Tossed Vermicelli (A Classic Taiwanese Combination)
Step 1: Prepare a pot of boiling water. Add handmade Taiwanese vermicelli and cook for approximately 2–3 minutes. Remove, drain thoroughly, and place in a bowl.
Step 2: Add 1 tablespoon of Golden Goose Fat with Garlic, 1 tablespoon of black sesame oil, and a small amount of traditionally brewed black soybean soy sauce.
Step 3: Mix thoroughly, then sprinkle with fresh chopped scallions and serve piping hot.
Versatile Applications in Chinese and Western Cuisine
Seafood / Meat Dishes: Use as a flavorful base oil and seasoning for garlic-steamed shrimp, garlic-seared scallops, garlic-infused steak, or roasted chicken.

★ Goose Fat with Garlic Clam Lemon Pasta Ingredients｜1 serving
-Spaghetti 100g
-Clams 150–180g (10–12 pieces)
-Goose Fat with Garlic25 g
-Pasta cooking water 120g
-Sake 20g
-Chopped cilantro 5–8g
-Lemon zest, as needed
-Salt, as needed
1. Cook the spaghetti in 1% salted water for 1–2 minutes less than the time indicated on the package, keeping the center slightly firm, then drain and set aside.
2. Add 25g Goose Fat with Garlic to the pan.
3. Add 200g pasta cooking water and 20g sake, and bring to a boil.
4. Add the clams, cover with a lid, and cook until the clams open.
5. Remove the clams immediately once they open to prevent the clam meat from becoming overcooked.
6. Add the spaghetti to the pan and continue tossing over medium-high heat to reduce the sauce.
7. When the sauce begins to thicken and is able to coat the pasta, reduce the heat to low.
8. Add 10g Goose Fat with Garlic and 5–8g chopped cilantro, then quickly toss to emulsify.
9. Taste and adjust with salt. Plate the pasta, arrange the clams on top, and finish by grating fresh lemon zest over the dish.
